Established by Bamboo Sushi in July, The Annex poke concept has been honed and rebranded, and on Monday, December 12, it officially relaunched as QuickFish Poke Bar. QuickFish serves a fleet of signature poke bowls to-go, as well as a few options like poke nachos, from the team behind Portland’s famously sustainable Bamboo Sushi restaurants. Speaking with Eater, Bamboo Sushi owner Kristofor Lofgren says QuickFish Poke Bar supplies something Bamboo Sushi can’t: A fast-casual — official buzzword of 2016? — on-the-go option for anyone seeking high-quality raw fish. And of all places, Lofgren says the Portland Trail Blazers in part inspired the idea.
“The Blazers are regular Bamboo Sushi customers,” Lofgren says, “and from feedback from them, I realized a lot of people, such as sports fans, want to eat sushi.” Sensing not everyone wants to sit down for a full meal at Bamboo, Lofgren conceived QuickFish, and he expects it to fill a gap Bamboo can’t, such as operating in airports and maybe even sports arenas.
